Chicken in Makhani Gravy (Chicken Curry with Tomato Based Gravy)

I am sharing this quick and easy recipe today. You may prepare the base/gravy before hand and can store it for 5/6 days in an airtight container in refrigerator. This gravy can be used as a base for various dishes like paneer, mushroom and / or fish. Today I am sharing the chicken recipe, which is our family favourite.

Ingredients:

  • Chicken – 1 kg (Curry cut)
  • Turmeric Powder – ½ tsp
  • Black Peppercorn – 1 tsp
  • Green Chilli – 2-3 nos
  • Tomato – 3-4 (Ripe and medium in size)
  • Onion – 1 Large
  • Ginger – 1”
  • Garlic – 12-15 (Cloves)
  • Cashew – 8 nos
  • Melon Seeds – 1 tsp
  • Cinnamon Stick – 1”
  • Green Cardamom – 2-3 nos.
  • Kasuri Methi or Dry Fenugreek Leaves – ½ tsp
  • Garam Masala Powder – ¼ tsp
  • Kashmiri Red Chilli Powder – 1 tsp
  • Sugar – ½ tsp
  • Salt – To taste
  • Refined Oil – 4-5 tsp
  • Butter – 1 tsp
  • Fresh Cream or Malai – 2 tsp (Optional)

Steps:

  1. To begin with wash and drain out water from chicken completely. Sprinkle turmeric powder and 1 tsp salt on chicken pieces. Apply thoroughly, cover and keep aside for 30-45 minutes.
  2. Meanwhile let’s prepare the base of the gravy. In a pan, take one-cup water. Add tomato, onion (cut into small pieces), ginger (chopped), garlic, cinnamon stick, green cardamom. black peppercorn, cashew, melon seeds and green chilli. Boil till the onions turn translucent. Let it cool down completely. Remove the skin of the tomatoes and blend everything into a smooth paste in a grinder.
  3. For a smooth creamy texture of the gravy, strain the gravy and keep aside.
  4. Heat 3-4 tsp of oil and add the chicken pieces. Fry till golden on low-medium heat. Take out in a bowl.
  5. Add 2 tsp butter in the same pan. Pour in the prepared ‘makhana gravy’. When the gravy starts to boil, turn down the heat. Add kashmiri red chilli powder, garam masala powder an kasuri methi. Cook for a while.
  6. Add the chicken pieces, salt, sugar and add ½ cup warm water. Cover and cook till the chicken is cooked.
  7. Add fresh cream and some more kasuri methi. Remove from heat and serve immediately with Butter Naan, Garlic Naan or Peas Pulao or simple steamed rice.
