Chicken Kofta Pulao with Vegetables

There are days when I want to quick fix my lunch and I end up cooking one pot meal like this. This Chicken Kofta Pulao with Vegetables is a complete meal where protein, vegetables and fibres are present in a single dish. As I like chicken than mutton, I have used minced chicken; you can use minced mutton too. You can add ‘beresta’ or fried onion in this rice too. It gives very nice caramelized flavour in the dish. There are two steps in this recipe, making of ‘kofta’, making of ‘vegetable pulao’ separately, and then combining. You can add cubed potato also if you wish to. It is a little lengthy recipe but with a little effort you can make a whole meal! Isn’t it great!!!


For making Chicken Kofta:

  • Minced Chicken – 200 gms
  • Garlic Paste – 1 tsp
  • Garlic Paste – 1 tsp
  • Onion Paste – 3 tsp
  • Egg – 1
  • Black Pepper Powder – 1 tsp
  • Red Chilli Powder – ½ tsp
  • Garam Masala Powder – ½ tsp
  • Nutmeg Powder – ¼ tsp
  • Salt – To taste
  • Oil – For frying the koftas

Other Ingredients:

  • Rice – 400 gms (Basmati or any long grained fragrant rice)
  • Carrot – 1 (Cut into small pieces)
  • Cauliflower – 1 big cup (Cut into small florets)
  • Green Peas – ½ cup
  • Onion – 1 Big (Chopped)
  • Green Chilli – 5-6 (Slitted)
  • Cinnamon Stick – 2”
  • Green Cardamom – 3-4
  • Clove – 4-5
  • Bay Leaf – 2
  • Whole Black Peppercorn – 1 tsp
  • Ginger Paste – 1 tsp
  • Salt – To taste
  • Garam Masala Powder – 1 tsp
  • Oil – 2 Tbsp
  • Ghee – 1 Tbsp


  1. In a big mixing bowl mix in all the ingredients mentioned under for making the kofta except oil. Leave for 30 minutes. Meanwhile let’s cook the pulao.
  2. In a big heavy bottomed cooking vessel heat oil and ghee.
  3. Temper it with all whole garam masala and green chilli.
  4. Add chopped onion and fry till it turns translucent. Add ginger paste. Sauté for a while.
  5. Add vegetables and salt. Cook for a while on medium-low heat.
  6. Next add washed and soaked rice. Sauté for 5 minutes and stir carefully.
  7. Add double the amount of water in pot. I have used 2 cups of rice so I have used 4 cups of water. Cover and cook till vegetable sand rice is almost done.
  8. In another pan heat oil for frying the koftas. Take a small portion from the minced chicken mix and roll it like a ball. Release in hot oil and cook until the koftas are cooked through. Take out from oil and keep aside.
  9.  When the water almost dries up add the fried koftas. Sprinkle garam masala powder. Cover and cook for a while.
  10. Switch off the gas And give a resting time of atleast 10-15 minutes. Serve hot with salad and raita.
