Doi Fulkopi (Cauliflower in Yogurt Sauce)

Here is another dish with cauliflower, ‘Doi Fulkopi’. The sweet n soup taste of this dish definitely gives a variety to your regular Bengali lunch or dinner menu. Cauliflower is a vegetable, which you can cook in different variations, and cauliflower with yogurt is a kind of combination, which tastes great. Cauliflower is one of my best loved veggies. I just don’t understand when people say cauliflower smells or it is bland. I am sure they are picking up the wrong kind. This cauliflower in yogurt sauce or ‘Doi Fulkopi’ is something I love to cook because it is very easy, less time consuming and very tasty. Flavored with whole spices like cloves and cinnamon, it has a rich fragrance. There is almost no other spices are used other than the Garam Masala and wrapped in this fragrance ‘Doi Fulkopi’ is the perfect winter dish to heat up a cold evening.

Ingredients to serve 6

  • CauliflowerFlorets (Medium Sized) – 1 Cauliflower
  • Yogurt – 250 gms
  • Onion Paste – 2 Tbsp
  • Garlic Paste – 1 ½ tsp
  • Ginger Paste – 2 tsp
  • Green Chilli Paste – 2 tsp
  • Cumin Powder – ½ tsp
  • Bay Leaf – 2
  • Cinnamon – 1” Stick
  • Green Cardamom – 2-3
  • Clove – 2-3
  • Dry Whole Red Chilli – 1
  • Green Chilli – 2
  • Garam Masala Powder – 1 tsp
  • Cashew, Poppy Seed and Raisin Paste – 2 tsp
  • Fresh Cream – 1 tsp (Optional)
  • Oil – 3 Tbsp
  • Ghee – 2 tsp
  • Sugar – 2 tsp
  • Salt – To taste
  • Kasuri Methi – 1 tsp


  1. Wash the cauliflower florets well and soak in warm water with a little salt for 15-20 minutes. Remove from water after 20 minutes.
  2. Heat oil in kadai and lightly fry the cauliflower florets till golden. Remove and keep aside.
  3. Add some more oil in kadai and temper the oil with bay leaf, dry whole red chilli, cinnamon stick, cardamom, and clove. Fry till it exudes aroma.
  4. When the spices sputter add cumin powder, garlicpaste and onion paste. Fry with a sprinkle of sugar till the onion turns a pinkish brown.
  5. Add 1 tsp ginger paste. Mix well.
  6. Now add poppy seed + cashew + raisin paste. Mix very well.
  7. Add the fried cauliflower florets and green chilli paste. Adjust salt.
  8. Now add yogurt. Beat the yogurt before adding. Mix well. Turn down the heat. Cover and cook till cauliflower is done.
  9. Add a little water or milk. Mix well.
  10. Drizzle 1 tsp ghee and fresh cream (optional) and garam masala powder.
  11. Crush the kasuri methi between your palms and sprinkle. Add green chilli. Cover and let it rest for 10-15 minutes.
  12. Serve with roti, paratha or naan.
