Dim Kosha (Spicy Egg Curry)

‘Dim’ or egg is loved by all in every family I guess, especially to children. And when I do not get any option for cooking I always prefer to cook something with egg. Today I’ll be sharing a simple and spicy egg preparation which is called ‘Dim Kosha’. It is a little spicy and oily. Those who do not consume red chilli powder can substitute with Kashmiri red chilli powder. You can also avoid putting potato in the preparation but since everybody in my famy like potato in Egg Curry or Chicken Curry or Mutton Curry, except me… I have to put in. Try this simple yet tasty egg preparation for dinner or lunch!

Ingredients to serve 4

  • Egg – 4 nos (Hard boiled)
  • Potato – 1 Big (Cut into big chunks)
  • Onion – 1 (Finely chopped)
  • Onion Paste – 2-3 Tbsp
  • Ginger Paste – 1 tsp
  • Garlic Paste – ½ tsp
  • Tomato – 1 Small (Chopped)
  • Turmeric Powder – ½ tsp
  • Red Chilli Powder – ½ tsp
  • Kashmiri Red Chilli Powder – ½ tsp
  • Cumin Powder – ½ tsp
  • Coriander Powder – ¼ tsp
  • Mustard Oil – ½ cup
  • Bay Leaf – 2
  • Green Chilli – 2
  • Garam Masala Powder – ½ tsp
  • Sugar – ½ tsp
  • Salt – To taste

Steps:

  1. Boil and peel the eggs. Peel the potatoes and keep aside.
  2. Heat oil in a pan. Make little slits on the eggs and fry them adding some turmeric powder and Kashmiri red chilli powder. Keep aside.
  3. In the same oil fry the potato pieces till golden brown and keep aside.
  4. Now add sugar, chopped onion and bay leaf. Fry till onion turns translucent.
  5. Next add garlic paste, ginger paste and onion paste. Sauté till oil separates.
  6. Add all the spice powder except garam masala powder and chopped tomato. Sauté again. If required sprinkle some water.
  7. Now add fried potatoes and keep sautéing. This process is called ‘Kosha’ in Bengali. Where vegetable/meat is sautéed with spices adding a little or no water.
  8. When oil starts separating from sides add water and then boiled eggs.
  9. Sprinkle garam masala powder. Adjust salt. Add slit green chilli. Cover and cook till potatoes are done. Let the water dries up a little.
  10. Garnish with chopped coriander and serve with any roti/paratha or choice of your rice/pulao.
