Baked Litti n Chokha (A traditional dish from Bihar)

‘Litti Chokha’ is a famous cuisine from Bihar. ‘Litti’ is nothing but a kind of stuffed dumpling made of whole wheat, cooked in open fire. ‘Chokha’ is made with boiled potato with other ingredients and some time grilled brinjal or eggplant is also been added. Here I have made the ‘litti’ in oven so that I can be cooked quickly and to give the smokey flavor, finally I grilled them on stove applying a little ghee. This is a complete meal and can be cooked in 30 minutes. Try this recipe and let me know how it was!

Ingredients to serve 4

For making the Litti Dough:

  • Whole Wheat Flour – 300 gms
  • Yogurt – 4-5 Tbsp
  • Baking Powder – 1 tsp
  • Ajwain or Carom Seeds – ½ tsp
  • Ghee – 2-3 tsp + for serving
  • Salt – To taste

For making the stuffing:

  • Roasted Gram Flour or Sattu – 8-10 Tbsp
  • Jeera or Cumin Seeds – ¼ tsp (Roasted)
  • Green Chilli – 2 tsp (Chopped)
  • Ginger – 1 tsp (Chopped)
  • Mustard Oil – For binding
  • Aamchur or Dry Mango Powder – 1 tsp
  • Black Salt – To taste
  • Turmeric Powder – ½ tsp
  • Red Chilli Powder – ¼ tsp (Optional)

For making Dry Masala:

  • Methi or Fenugreek Seeds – ¼ tsp
  • Dhania or Whole Coriander – ¼ tsp
  • Kalonji or Nigella Seeds – ¼ tsp
  • Snauf or Fennel Seeds – ¼ tsp

For making Chokha:

  • Baingan or Egg Plant – 1 (Big)
  • Potato – 2 (Big – boiled)
  • Onion – 1 (Chopped)
  • Chopped Coriander – A handful
  • Ginger – 1 tsp (Chopped)
  • Chilli – 2 (Chopped)
  • Lemon Juice – 2 tsp
  • Salt – To taste
  • Mustard Oil – 1-2 tsp

Steps:

  1. In large mixing bowl mix all the ingredients mentioned under for making the dough.
  2. Now start kneading the dough adding a little water at a time. The dough should be a little tight.
  3. Cover and keep aside.
  4. In a pan dry roast the masala mentioned under for making the masala and grind them in fine powder.
  5. In a separate bowl mix all the ingredients mentioned under for making the stuffing. Mix very well.
  6. Now add this freshly ground masala powder.
  7. Add mustard oil just to bind all together.
  8. Divide the dough into 6 equal portions.
  9. Now take one potion and make a depression in the middle of the dough and stuff it with the sattu filling that has been prepared. Cover it from all sides.
  10. Pre heat the oven at 200 C. Grease the baking dish with a little oil. Now place the stuffed Litti on the baking tray keeping a little space in between.
  11. Bake for 15-20 minutes at 160 C or till not crisp from outside.
  12. Grill the eggplant on stove top applying a little oil on outside. Make two slits on the eggplant. After the skin becomes crinkle and charred keep the grilled eggplant in a pot. Cover and let it rest for sometimes. Now remove the burnt skin.
  13. In a bowl mash the eggplant and potato with the help of a spatula.
  14. Add all ingredients mentioned under for making ‘Chokha’.
  15. Meanwhile the Litti must be ready. Serve with chokha applying some ghee. Or if you want to get a charcoal effect apply a little ghee on the Littis and grill them again on stove top. Then serve with ‘Chokha’ applying some more ghee.
