Gobi Manchurian (Cauliflower Manchurian)


We often make ‘Gobi Manchurian’ as a starter or as a side with noodles. Mildly sweet and savory crispy fried ‘Gobi’ (cauliflower) when coated with soya and chilli sauce gives awesome taste. It is advised to serve it immediately after you prepare so that you can get the crispy texture of the fried ‘Gobi’. You can prepare the the fried ‘gobi’ in advance and can prepare the gravy just before you serve it. The nice crispy ‘gobi’ with hot n sweet sauce tastes just divine.  Here goes the recipe of ‘Gobi Manchurian’ my way…

Ingredients for serving 4:

  • Cauliflower – 20-25 florets (Medium Sized)
  • Flour – 2 Tbsp
  • Cornflour – 3 Tbsp
  • Baking Powder – ½ tsp
  • Ginger-Garlic Paste – 1 Tbsp
  • Soy Sauce – 1 tsp
  • Black Pepper Powder – ½ tsp
  • Egg – 1 (Optional)
  • Salt – To taste
  • Oil – For deep frying

For Sauce:

  • Spring Onions – ¼ cup (Finely Chopped)
  • Onion Paste – 1 Tbsp
  • Chopped Garlic – 1 Tbsp
  • Chopped Ginger – 1 tsp
  • Green Chilli – 2 (Finely Chopped)
  • Soya Sauce – 2 tsp
  • Chilli Sauce – 1 tsp
  • Vinegar – 1 tsp
  • Tomato Sauce – 2 Tbsp
  • Sugar – 1 tsp
  • Black Pepper Powder – ½ tsp
  • Salt – As required
  • Chopped Coriander Leaves – 2 Tbsp


  1. Heat oil for deep frying in a heavy bottomed pan or kadai.
  2. In a bowl, combine maida/flour, cornflour, baking powder, salt, ginger-garlic paste, pepper powder, soy sauce and salt. Sprinkle little water or 1 egg to make a thick batter.
  3. Dip each cauliflower florets in batter and release in oil. Fry till they become brown and crispy. Remove onto absorbent paper and keep aside.
  4. Heat 2 tsp oil in a large wok and once the oil is piping hot add the chopped garlic and stir fry for a few seconds. Add the green chillis and ginger and stir fry on high for a few seconds.
  5. Add the onion paste half of chopped spring onions, stir fry on high for 2 minutes.
  6. Add sugar, soya sauce, tomato ketchup, chilli sauce, black pepper powder and vinegar. Mix well add ¼ cup of water and cook for 1 minute.
  7. Mix 1 Tbsp of cornflour in a little water. Keep aside. Add the cornflour water slowly and keep stirring till it takes thick gravy like consistency. Cook for few seconds. Turn off heat.
  8. Add the fried cauliflower to the gravy at the time of serving. Garnish with rest of chopped spring onion and coriander leaves.
