Navratan Korma (Mixed Vegetable Curry with Creamy Sweet Gravy)

Navratan korma is a vegetarian Muglai dish made with mixed vegetable, nuts and paneer. ‘Navratan’ consists of two words ‘Nav’ n ‘Ratan’. ‘Nav’ means Nine and ‘Ratan’ means Gems. It is a mixed veg curry with a creamy and slightly sweet gravy. In original recipe pineapple is also use that gives an extra sweet flavor, I didn’t use in this recipe. But in another rich version of this curry will definitely use. This is a winter staple that we cook quite often in winter. Sometimes following this recipe or sometimes a rich and spicy version of it. That recipe I will share later.

Ingredients to serve 4

  • Potato – 1 (Medium-cut into thick strips)
  • Carrot – 1 (Medium-cut into thick strips)
  • Cauliflower – ½ cup (Cut into small florets)
  • Beans – ¼ cup (Cut into 2” pieces)
  • Capsicum – ½ cup (Cut into thin strips)
  • Green Peas – ¼ cup
  • Paneer – 150 gms
  • Onion Paste – ½ cup
  • Tomato Puree – 1 cup
  • Ginger Paste – 1 Tbsp
  • Garlic Paste – 1 tsp
  • Melon Seed Paste – 2 Tbsp
  • Cashews – 6-8
  • Raisins – 1 Tbsp
  • Yogurt – 2-3 Tbsp
  • Red Chilli Powder – ½ tsp
  • Cumin Powder – 1 tsp
  • Coriander Powder – 1 Tbsp
  • Garam Mmasala Powder – ½ tsp
  • Milk – ½ cup
  • Fresh Cream – ¼ cup
  • Sugar – 1 tsp
  • Salt – To taste
  • Oil – 3-4 Tbsp
  • Chopped Coriander – A handful

Steps:

  1. Cut the paneer in thick strips.
  2. Heat 2 Tbsp oil in a kadai or wok and add potato, carrot, cauliflower and beans. Sauté adding a little salt for 6-8 minutes. Take out from wok and keep aside.
  3. Add 2 Tbsp of oil more and start adding the ground pastes one by one (onion, ginger, garlic, tomato). When oil starts separating add melon seed paste and all the dry masalas except garam masala powder.
  4. Next add yogurt and the sautéed vegetables. Mix very well and adjust salt.
  5. Now add a little water and sugar. Cover and cook till the vegetables are almost done.
  6. Remove the cover and add milk, paneer pieces, capsicum, raisins and cashew. Sprinkle garam masala powder. Mix with a light hand. And cook for another 2-3 minutes till paneer absorbs all the flavours.
  7. Now add the fresh cream and remove from heat. Garnish with chopped coriander and serve with Naan or paratha.
