Fulkopir Malaikari (Cauliflower Cooked in Coconut Gravy)

I know most of you do not like to eat ‘Fulkopi’ or cauliflower at all. And In winter the main vegetable that is cooked in Indian homes are different preparations with cauliflower. Today I will be sharing a simple yet tasty dish from my kitchen, i.e. ‘Fulkopir Malaikari’. Now many of you well aware of ‘Chingrimacher Malaikari’, which is one of the most popular fish preparation from Bong kitchen! I just replaced ‘Chingri’ (Prawn) with ‘Fulkopi’ (Cauliflower). Keeping the basic recipe same. It came out so well! Try this with any Pulao or Paratha. I serve it with Methi Paratha in dinner.

Ingredients to serve 4

  • Cauliflower Florets – 10-12
  • Cinnamon Stick – 1”
  • Green Cardamom – 2
  • Clove – 2-3
  • Green Chilli – 2-3
  • Onion Paste – ½ cup
  • Ginger Paste – 1 ½ tsp
  • Garlic Paste – ½ tsp
  • Cumin Powder – 1 tsp
  • Turmeric Powder – ½ tsp
  • Red Chilli Powder – ½ tsp
  • Garam Masala Powder – ½ tsp
  • Coconut Milk – 1 cup
  • Fresh Cream – 2 Tbsp
  • Mustard Oil – ¼ cup
  • Sugar – 1 tsp
  • Salt – To taste

Steps:

  1. Heat oil in a kadai. Add the cauliflower florets. Fry them till golden brown adding a little turmeric powder. Take out from oil and keep aside.
  2. Now temper the oil with whole garma masala. When they exudes aroma add onion paste and fry till oil separates.
  3. Now add ginger paste, garlic paste and all other dry masalas except garam masala powder.
  4. Fry the masala till oil separates. Now add the fried cauliflower florets. Add sugar and adjust salt. Mix very well.
  5. Add a little water and the coconut milk. Cover and cook till the cauliflower florets are done.
  6. Remove the cover and add garam masala powder and green chilli. Let it rest for 5-10 minutes.
  7. Serve adding fresh cream from top with any pulao or paratha.
