Orange & Walnut Cake

This Orange & Walnut Cake is the most liked cake recipe in our house. It is moist, tasty and yummy. It is full of freshness of orange juice and vitamin C. Usage of orange juice makes the cake very moist and fresh flavor. At the same time walnut adds crunchiness to the texture.

I mostly make it without icing as it tastes as good as with icing. Try this simple yet tasty cake recipe during winter season.

Ingredients

For Cake:

  • All Purpose Flour – 200 gms
  • Egg – 4 no.s
  • Unsalted Butter – 200 gms
  • Orange Juice – Of 1 orange
  • Sugar – 200 gms
  • Baking Powder – 2 tsp
  • Vanilla Essence – 1tsp
  • Walnut – ¼ cup (Chopped)
  • Orange Zest – ¼ tsp

 For Icing:

  • Orange Juice – Of ½ orange
  • Icing Sugar – 100 gms
  • Egg Yok – 1
  • Orange – for decoration
  • Cherry – for decoration

Steps:

  1. Preheat oven to 180 degree C.
  2. Take butter in a bowl and beat it well. If water separates from the butter, drain it.
  3. Add sugar and beat well again till the sugar is incorporated in the butter.
  4. Add eggs and mix thoroughly.
  5. Sieve all purpose flour and baking powder.
  6. Mix the flour-baking powder mixture in the mixture gently till incorporated well.
  7. Mix in vanilla essence, orange juice, orange zest and chopped walnut.
  8. Pour in the mixture in the cake pan.
  9. Shake the pan lightly so that the cake is spread evenly throughout the whole pan.
  10. Bake in the preheated oven for 180 degrees C for 40 minutes or more or till a toothpick inserted in the middle comes out clean.
  11. Rest the cake atleast for 3-4 hours.
  12. In a bowl mix orange juice and egg. Mix well.
  13. Now start adding icing sugar spoon by spoon. And mix very well till the mixture becomes tight and white in colour.
  14. Spread this icing with a spatula on the cake and let it dry for 1 hour.
  15. Decorate with orange pieces and cherries. (As shown in the picture)

Notes:

~It is best if you rest the cake for one day and the icing it.

~ You can serve the cake without icing as well.
